Ingredients
  

  • 1 jalapeño
  • 1 – 2 serranos depending on desired heat level
  • 1/4 white onion
  • 4 garlic cloves
  • 8 – 10 tomatillos depending on size
  • 2 tbsp neutral oil
  • 1/2 – 1 cup of water to thin out the salsa as needed
  • Salt to taste

Instructions
 

  • In a stock pot over medium-high heat, boil the jalapeño, serranos, onion, garlic, and tomatillos until cooked through, about 12 – 15 minutes.
  • Transfer the cooked ingredients to a blender and blend on high until completely smooth.
  • Heat the oil in the same pot over medium heat.
  • Pour in the blended salsa and thin with 1/2 – 1 cup of water, depending on your desired consistency.
  • Simmer for 8 – 10 minutes, stirring occasionally.
  • Season with salt to taste and serve warm or chilled.

Notes

  • For a slightly smokier version, roast the ingredients instead of boiling.
  • Use fewer serranos or swap in a milder chili if you want less heat.
  • This salsa keeps in the fridge for up to 5 days in a sealed container.
  • Pairs perfectly with carne asada, al pastor, or breakfast tacos.
  • Add chopped cilantro after cooking for extra freshness.
