Salsa Verde Cruda

Salsa Verde Cruda is a vibrant, uncooked green salsa that captures the bright, zesty flavors of raw tomatillos, serranos, lime, and cilantro. Blended until silky and finished with a drizzle of olive oil, it’s tangy, spicy, and incredibly fresh. This quick 5-minute salsa is perfect for tacos, grilled meats, eggs, or just scooping up with chips.

Ingredients 

  • 5 – 6 tomatillos, depending on size
  • 3 – 4 serranos
  • 1/8 white onion
  • 1 garlic clove
  • 6 – 8 sprigs cilantro
  • Salt, to taste
  • 1/4 cup water, as needed to thin out the salsa
  • Zest and juice of 1 lime
  • 2 tbsp olive oil

Instructions 

  • Add the tomatillos, serranos, onion, garlic, cilantro, salt, water, lime zest, and lime juice to a blender.
  • Blend until completely smooth.
  • With the blender running, stream in the olive oil until fully incorporated.
  • Taste and adjust seasoning or thickness as needed.
  • Serve immediately or refrigerate until ready to use.

Notes

  • If you prefer less heat, start with 2 serranos and add more to taste.
  • Use very fresh tomatillos for the brightest flavor.
  • Streaming in olive oil helps create a velvety finish—don’t skip it!
  • Pairs beautifully with carne asada, tacos de pescado, or grilled veggies.
  • Store in an airtight container in the fridge for up to 3 days.
