Ingredients

  • 8 ripe kiwis, peeled and chopped
  • 6 cups cold water
  • ½ – ¾ cup sugar, adjust to taste
  • Juice of 2 limes
  • 1 tbsp chia seeds, optional
  • Ice, for serving
  • Fresh kiwi slices, for garnish

Instructions

  • Add the chopped kiwis, 2 cups of water, sugar, and lime juice to a blender. Blend for 8–10 seconds, just until smooth. Avoid over-blending to keep the kiwi seeds from breaking down too much, which can result in a murky color.
  • Strain the mixture through a fine-mesh sieve into a pitcher for a smoother texture, using a spoon to help push the liquid through if needed.
  • Stir in the chia seeds and the remaining water. Refrigerate for 15–20 minutes to allow the chia seeds to hydrate and plump up.
  • Give the drink another good stir before serving. Pour over ice and garnish with fresh kiwi slices. Enjoy!

Notes

  • Choose ripe kiwis – The sweeter and softer the kiwi, the better the flavor and natural sweetness of your agua fresca. Slightly wrinkled skin is a good sign of ripeness.
  • Don’t overblend – A quick blend (8–10 seconds) is all you need. Overblending will crush the kiwi seeds, which can cause bitterness and a duller, murky green color.
  • Strain for smoothness – Use a fine-mesh sieve to remove excess pulp and seeds for a more refined and visually appealing drink.
  • Chill before serving – Letting the drink rest in the fridge allows the chia seeds to fully hydrate and the flavors to meld together for a more refreshing sip.
  • Customize the sweetness – Start with ½ cup of sugar, taste, and adjust. If your kiwis are extra sweet, you may need less sugar—or swap in honey or agave for a different twist.
