- 15 cups water
- 1/4 cup hibiscus flowers
- 2 tamarind pods
- 3 cinnamon sticks
- 4-5 whole cloves
- 6 guavas chopped
- 2 apples chopped
- 1 piloncillo cone
- 1/2 cup prunes
- 1/2 cup raisins

Start by removing the tamarind from their pods and deveining them.
In a large pot, bring the water to a simmer. Add the cinnamon sticks, hibiscus flowers, tamarind, and whole cloves. Lower the heat to medium-low and let it simmer for about 20 minutes.
Once done, strain out the solids using a fine mesh strainer and discard them.
Add the chopped guavas, apples, piloncillo, prunes, and raisins to the pot. Simmer for another 30 minutes to let the flavors come together.
Remove from heat and stir in the rum, if using.
Serve the ponche hot in mugs, making sure to include a few pieces of fruit in each serving. Enjoy!
