Ingredients

  • 15 cups water
  • 1/4 cup hibiscus flowers
  • 2 tamarind pods
  • 3 cinnamon sticks
  • 4-5 whole cloves
  • 6 guavas chopped
  • 2 apples chopped
  • 1 piloncillo cone
  • 1/2 cup prunes
  • 1/2 cup raisins
  • 1 cup rum optional

Instructions

  • Start by removing the tamarind from their pods and deveining them.
  • In a large pot, bring the water to a simmer. Add the cinnamon sticks, hibiscus flowers, tamarind, and whole cloves. Lower the heat to medium-low and let it simmer for about 20 minutes.
  • Once done, strain out the solids using a fine mesh strainer and discard them.
  • Add the chopped guavas, apples, piloncillo, prunes, and raisins to the pot. Simmer for another 30 minutes to let the flavors come together.
  • Remove from heat and stir in the rum, if using.
  • Serve the ponche hot in mugs, making sure to include a few pieces of fruit in each serving. Enjoy!

Notes

  • Be sure to devein and clean tamarind before simmering.
  • Straining the tea base helps keep the final drink smooth.
  • Piloncillo adds depth, but brown sugar can be substituted.
  • The punch can be made ahead and reheated.
  • Add the rum at the end to preserve its flavor and aroma.
