Truffle Aioli

This quick, luxurious truffle aioli whisks together truffle mayonnaise with fresh garlic, lemon juice, and Dijon mustard for a dip that elevates absolutely everything it touches. It takes 5 minutes to make, gets better the longer it sits in the fridge, and turns simple fries or a burger into something that feels way more special.

Ingredients

  • ½ cup Maille Truffle Mayonnaise
  • 1 garlic clove, finely minced
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp warm water, to loosen if needed
  • Pinch of salt
  • Pinch of black pepper

Instructions

  • Whisk together the Maille Truffle Mayonnaise, garlic, fresh lemon juice, Dijon mustard, salt, and black pepper until completely smooth and combined.
  • Add a teaspoon of warm water if you want a slightly looser consistency for dipping. Taste and adjust lemon and salt as needed.
  • Refrigerate until ready to serve. The aioli gets significantly better as it sits and the flavors meld.
  • Serve with fries for dipping or slather on burgers for a burst of flavor.

Notes

  • Make this at least 30 minutes ahead if you can – the garlic and lemon meld into the truffle mayo and the flavor deepens noticeably after resting in the fridge.
  • Mince the garlic as finely as possible so you get even flavor distribution without biting into raw garlic chunks.
  • Add the warm water only if you want a thinner, more drizzleable consistency. Skip it if you’re using this as a spread on burgers or sandwiches.
  • This keeps well in the fridge for up to 5 days in an airtight container, so double the batch if you know you’ll use it throughout the week.
