Spicy Watermelon, Mint & Feta Salad

This Spicy Watermelon, Mint & Feta Salad is a fresh, fiery twist on a summer favorite. Juicy watermelon and crisp cucumber are paired with sharp serrano peppers, tangy feta, and cooling mint, all drizzled with a sweet balsamic glaze. It’s the perfect balance of sweet, salty, spicy, and herbaceous—refreshing enough for a hot day, but bold enough to stand out at any BBQ or picnic.

Ingredients 

  • 4 cups watermelon, chopped into bite-sized pieces
  • 2 cups Persian cucumber, chopped into bite-sized pieces
  • 2 serrano peppers, sliced into rounds (use jalapeño or omit for less heat)
  • 1 shallot or 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 15 – 20 fresh mint leaves
  • 1/4 cup balsamic glaze

Instructions 

  • On a medium-sized serving platter, layer the watermelon, cucumber, serrano pepper, shallot or red onion, feta, and mint leaves.
  • Drizzle the balsamic glaze over the top.
  • Serve immediately and enjoy!

Notes

  • Use seedless watermelon for easier prep and cleaner presentation.
  • Replace feta with goat cheese for a tangier bite.
  • Chill all ingredients before assembling for an extra-refreshing salad.
  • Balsamic reduction adds sweetness—no dressing needed!
  • This salad doesn’t keep well, so assemble just before serving.
