Ingredients

  • 3 large oranges, halved and scooped clean
  • 1 cup Fruit Riot Mango frozen chunks, regular or spicy; thawed slightly, cut small
  • ½ cup orange juice
  • 2 tbsp lime juice
  • 1 tbsp agave syrup or honey
  • ¼ cup tequila blanco, see notes below
  • 1 packet, 2½ tsp unflavored gelatin
  • ¼ cup cold water, for blooming
  • Chili lime seasoning and flaky sea salt, for topping

Instructions

  • Cut the oranges in half and carefully scoop out the insides, leaving the peel intact. Place each half in a muffin tin or on a tray so they stay upright while filling.
  • In a small bowl, pour ¼ cup cold water and sprinkle the gelatin evenly over the top. Let sit for 5 minutes until it thickens.
  • In a small saucepan, combine orange juice, lime juice, and agave syrup. Warm gently over medium-low heat until hot but not boiling (about 2–3 minutes).
  • Remove from heat and whisk in the bloomed gelatin until completely dissolved and smooth. Let it cool for 2–3 minutes, then stir in the tequila or vodka.
  • Add 5-6 pieces of Fruit Riot mango into each orange half. Pour the warm jello mixture over the fruit, filling each orange almost to the top. Refrigerate for 3–4 hours, or until fully set.
  • Once firm, slice each orange half into 3–4 wedges. Right before serving, sprinkle half with Tajín and the other half with flaky sea salt.
  • Serve cold and enjoy!

Notes

Make sure the juice mixture never heats to a simmer — keeping it warm (not boiling) helps the gelatin set properly and preserves the alcohol. Let the mixture cool just a bit before adding the tequila so the flavor stays bright and the jello stays firm.
Pat the inside of the orange shells completely dry before filling; any leftover moisture can prevent the jello from sticking cleanly to the peel.
Keep the Fruit Riot mango pieces small so the wedges slice neatly without breaking apart.
For picture-perfect wedges, dip your knife in hot water, wipe it dry, and slice slowly — it gives you clean, smooth edges every time.
