
Pumpkin Spice Horchata
Pumpkin spice horchata is a creamy, spiced twist on the classic Latin drink. Blending rice, cinnamon, pumpkin puree, and warming spices, this fall-inspired beverage is rich, refreshing, and perfect served over ice or transformed into a pumpkin spice latte!
Ingredients
- 1 cup long-grain white rice, rinsed
- 1 large cinnamon stick
- 4 cups water, for soaking
- 2 cups cold water, for mixing in
- 1 cup milk, whole, oat, or almond
- 1 cup pumpkin puree
- 1 cup sweetened condensed milk
- 1 cup evaporated milk
- 1 cup sugar, adjust to taste
- 1 tsp vanilla extract
- 1 ½ tsp pumpkin pie spice
- Ice, for serving
Instructions
- In a large bowl, combine rinsed rice, cinnamon stick, and 4 cups water. Cover and soak for at least 8 hours or overnight.
- Remove cinnamon stick. Blend soaked rice with soaking water until milky, about 2 minutes.
- Strain through a fine-mesh sieve or cheesecloth into a pitcher.
- Add 2 cups cold water, milk, pumpkin puree, condensed milk, evaporated milk, sugar, vanilla, and pumpkin pie spice. Blend or whisk until smooth.
- Refrigerate at least 1 hour, or serve immediately over ice. Sprinkle pumpkin pie spice or cinnamon on top if desired.
Notes
- Blend in cold brew coffee for a pumpkin spice horchata latte.
- Garnish with a cinnamon stick for a festive touch.
- Adjust sugar to taste – keep it lighter if using sweetened pumpkin puree.
- Shake or stir before serving, as it tends to settle.
