
Mango Pomelo Ceviche
This bright, fresh ceviche layers citrus-cured white fish with juicy mango, sweet pomelo, crisp cucumber, and a kick of serrano for a bowl that's equal parts tropical and vibrant. Light, refreshing, and ready in under 30 minutes – it's the perfect warm weather dish served over tostadas or scooped up with chips!

Ingredients
- 1 lb fresh white fish, cut into small cubes (mahi mahi, halibut, or sea bass work great)
- 1 cup fresh lime juice, about 8–10 limes, plus more to taste
- 1 large ripe mango, finely diced
- ½ large pomelo, supremed and roughly chopped
- ½ English cucumber, finely diced
- ¼ small red onion, very finely diced
- 1 –2 serrano chiles, very finely diced (seeds removed for less heat)
- 1 tbsp fresh orange juice
- Salt and white pepper to taste
- Small handful of fresh cilantro, roughly chopped
For serving:
- tostadas or tortilla chips
Instructions
- Place the cubed fish in a shallow bowl and pour the lime juice over it, making sure every piece is fully submerged. Cover and refrigerate for 15–20 minutes until the fish is opaque and lightly cured on the outside but still tender in the center.
- Drain off the lime juice and set the lime juice aside to use later.
- Add the mango, pomelo, cucumber, red onion, salt, pepper and serrano to the drained fish. Pour the orange juice over everything and toss gently to combine. Taste and adjust – add more lime if it needs brightness, or more serrano if you want more heat.
- Fold in the fresh cilantro right before serving.
- Serve immediately over crispy tostadas or with tortilla chips, and enjoy!
Notes
- Fresh lime juice only, bottled lime juice won’t give you the same bright, clean flavor and will affect the cure on the fish.
- Don’t over-cure the fish. 15–20 minutes gives you that perfect tender-but-set texture. Much longer and it gets rubbery.
- Pomelo can vary in sweetness – taste yours before adding and adjust the serrano or lime to keep everything balanced.
- Dice everything as uniformly as possible so you get a little bit of each ingredient in every bite.
