Grilled Yogurt-Marinated Chicken Skewers

Grilled Yogurt-Marinated Chicken Skewers are tender, juicy, and full of flavor thanks to a simple marinade made with Greek yogurt, garlic, lemon, and warm spices like cumin and coriander. The yogurt helps tenderize the chicken while infusing it with tang and depth, creating juicy skewers that are perfect for grilling season or any time you're craving bold, smoky flavor.
Finished with a brush of melted butter, a squeeze of lemon, and fresh herbs, these skewers are perfect served over rice, wrapped in flatbread, or plated with a crisp salad.

Ingredients 

  • 1/2 cup plain Greek yogurt
  • 2 tbsp butter, melted
  • 3 – 4 garlic cloves, finely minced or microplaned
  • Zest and juice of 1 lemon
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 lbs chicken breast or thighs, cut into 1-inch pieces
  • Wooden or metal skewers

Top with:

  • Extra melted butter, fresh lemon juice and chopped cilantro or parsley

Instructions 

  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  • In a medium bowl, whisk together the yogurt, butter, garlic, lemon zest and juice, olive oil, cumin, coriander, salt, and black pepper.
  • Add the chicken pieces to the marinade and toss to coat thoroughly.
  • Cover and refrigerate for at least 2 hours, preferably overnight.
  • Preheat your grill to medium-high heat.
  • Thread the marinated chicken onto the skewers.
  • Grill the skewers for 5 – 7 minutes on each side, or until the chicken is cooked through and nicely charred.
  • Transfer to a serving plate and brush with extra melted butter.
  • Finish with a squeeze of fresh lemon juice and a sprinkle of chopped cilantro or parsley.

Notes

  • Greek yogurt tenderizes the chicken while keeping it juicy—don’t skip the marinating time
  • For extra flavor, use smoked paprika or a pinch of cayenne in the marinade
  • These skewers also cook well on a stovetop grill pan or under a broiler if you don’t have an outdoor grill
  • Serve with warm pita, rice, grilled veggies, or tzatziki for a full meal
  • Leftovers are great in wraps or chopped over salads
