They’re savory and a little spicy – they’re absolute perfection. My favorite is also when the chips are still a little crispy when you bite into them. If you’ve never had Chilaquiles before, they’re a Mexican breakfast consisting of tortilla chips that are then tossed in either a red or green salsa and topped with other items such as chicken, beef, pork, eggs, avocado, cheese and/or crema. I’m salivating as I’m typing this – you definitely need to make this recipe for your next weekend brunch at home!

How to Make Mexican Chilaquiles Rojos with Fried Eggs

1. Boil the tomato, onion, garlic and dried chilies in a medium-sized pot until thoroughly cooked through – about 10-12 minutes.

2. Transfer these ingredients over to a blender, along with 1 cup of the reserved cooking water, salt, pepper, ground cumin, garlic powder, onion powder and chicken bouillon, and blend until completely smooth. Once completely smooth, check the sauce for seasoning and set aside.

3. In a small saucepan, fry the eggs in 2 tbsp of oil to their desired doneness, season with a little salt and pepper, then set aside.

4. While the eggs fry, add the tortilla chips to a large saucepan over medium-low heat and pour the sauce over the chips. Toss them very gently and carefully for about 1 minute so that they’re completely coated in the sauce, but also don’t break in the process. Turn off the heat and set aside.

5. Plate the chilaquiles and top with the fried eggs and any optional garnishes!

Mexican Chilaquiles Rojos With Fried Eggs (Chilaquiles Rojos Con Huevos Fritos)

4-5 servings

Total time: 25 mins

2 roma tomatoes, whole

½ white or yellow onion

3-4 garlic cloves, whole

2-4 dried chiles de arbol (depending on desired level of heat)

4-5 dried chiles guajillo, washed and deveined

1/4 tsp ground cumin

½ tsp garlic powder

½ tsp onion powder

1/2 tsp chicken bouillon

salt, to taste

pepper, to taste

2 tbsp neutral cooking oil

4 eggs

tortilla chips 

Optional toppings — avocado slices, radish slices, chopped cilantro, chopped white onion, crumbled queso fresco, crema

Boil the tomato, onion, garlic and dried chilies in a medium-sized pot until thoroughly cooked through – about 10-12 minutes.

Transfer these ingredients over to a blender, along with 1 c of the reserved cooking water, a little bit of salt, a little bit of freshly ground pepper, add the ground cumin, garlic powder and onion powder, and blend until completely smooth. Once completely smooth, check the sauce for seasoning and set aside.

In a small saucepan, fry the eggs in 2 tbsp of oil to their desired doneness, season with a little salt and pepper, then set aside.

While the eggs fry, add the tortilla chips to a large saucepan over medium-low heat and spoon the sauce over the chips. Toss them very gently and carefully for about 1 minute so that they’re completely coated in the sauce, but also don’t break in the process. Turn off the heat and set aside.

Plate the chilaquiles and top with the fried eggs and any optional garnishes!
