How to Make Quick and Easy Margherita Pizza Toast Bites

You know those Latina moms where you would be out running errands, then you tell her “moooomm, I’m hungry” and she says “tenemos bastante comida en la casa!”, then you go home and open the fridge and there’s a tupperware of beans, a lonely quesito in the drawer and a loaf of bread. That was my mom 😂

And it wasn’t that we didn’t have food (so thankful to have grown up with food on the table every day), it was that she wouldn’t buy a whole lot of quick, ready made foods (ie. Hot Pockets, Lunchables, frozen pizzas). She valued nutrition so much, and that’s why she would also limit how often we ate fast food. She loved cooking and she loved providing nutritious meals to her family. So maybe we didn’t have all the things we wanted in our fridge and pantry like Pop Tarts and soda, but we always had nutritious whole foods stocked that didn’t break the bank.

And although that’s all great to hear, we were still KIDS. All of our friends at school still ate all the yummy things we craved, so what she would then do is try to recreate healthier versions of all our biggest cravings. And that’s the inspiration for this recipe – the pizza toasts she would make us using Ezekiel Bread 🙂

It’s perfect for that pizza craving when you’re either looking to eat a little healthier or simply don’t want to order delivery. Either way, I promise you it’s sooo good. So here’s a bite-sized version that’s perfecting for snacking or to serve as an appetizer!

How to Make These Margherita Pizza Bites:

  1. Preheat your oven to 400 degrees.
  2. Lay the quartered bread onto a parchment-lined baking sheet and toast for 5 minutes.
  3. Pull the toasts out of the oven and while they are still warm, generously rub the garlic clove on the toasts.
  4. Add marinara on each toast and evenly spread it over using a butter knife or the back of a spoon. 
  5. Sprinkle Italian seasoning over the marinara, then place a slice of mozzarella over each, followed by the thinly sliced tomato.
  6. Bake for another 5 minutes, then lower the baking sheet to the lowest baking rack in your oven and broil on high for 2 minutes (this is what will give you the beautiful, slightly golden melted cheese). 
  7. Pull the pizza bites from the oven and top with flaky (or regular) sea salt and torn basil leaves.
  8. Allow to cool for about 2 minutes before serving.

Margherita Pizza Bites – Tips & Tricks

  • For a deliciously crispy pizza bite, use a sturdy bread! My favorite to use is Food is Life’s Ezekiel Bread because it’s sturdy enough to hold it’s shape when baked with the toppings and it crisps up perfectly in the oven.
  • These pizza bites are best enjoyed immediately, but if you happen to have leftovers I recommend storing them in an airtight container and reheating them on a parchment-lined baking sheet in the oven at 400 degrees for about 3-4 minutes! They’ll keep in the fridge for about 2-3 days.

The easiest and quickest Margherita Pizza Bites, and the best part is – you probably already have most of the ingredients in your kitchen!

Ingredients

  • 4 slices of your favorite bread, each bread quartered evenly (my favorite to use is Food is Life’s Ezekiel Bread)

  • 1 garlic clove

  • ¼ c and 2 tbsp marinara

  • 1 tsp Italian seasoning

  • 4 oz low-moisture mozzarella, sliced and cut into the size of the quartered bread

  • 1-2 roma tomatoes, thinly sliced (depending on size)

  • 1/2 tsp flaky sea salt

  • 4-8 fresh basil leaves (depending on size)

Directions

  • Preheat your oven to 400 degrees.
