If you’ve never heard of Haystacks, they’re essentially a cross between a taco salad and nachos. Consisting of a bed of chips and layers and layers of fresh veggies and toppings, they’re the easiest and quickest meals to get on the table, especially for large crowds!

I grew up in a Seventh Day Adventist household and we had Haystacks alllll the timeee. Church gatherings, camping, lazy Sundays—it was always the perfect meal that everyone enjoyed.

Being Seventh Day Adventist also meant that we ate a lot of vegetarian meals, especially at church. So growing up I only ate haystacks that didn’t include meat and even now that I’m older, I prefer them vegetarian. The beans add plenty of protein to this dish and it really is a nice little break from beef or poultry.

One of my favorite parts about this dish is that you can simply set the individual ingredients in bowls on the table and allow each person to assemble their haystacks however they’d like! Easier for you and better for them since they get to customize their haystacks however they’d like!

How to Make Vegetarian Haystacks:

Thin out the sour cream with the water and mix until completely smooth. Then simply assemble the haystacks in whichever order you’d like!

My favorite is:

  4. Tomatoes
  5. Sour cream
  6. Olives
  7. Cheese
  8. Salsa

Vegetarian Haystacks – Tips & Tricks

  • Feel free to add or omit any ingredients as you’d like! These Haystacks are perfectly customizable.
  • If there are any leftovers, store each ingredient individually in airtight containers. Store the fresh ingredients in the fridge for up to 3 days, then assemble when ready to eat.

Ingredients

  • 20 oz Tortilla chips

  • 4 c shredded Romaine lettuce

  • 3 tomatoes, chopped

  • 2 c black (or pinto) beans

  • ½ c sour cream

  • 2 tbsp cold water

  • 5 oz queso fresco, crumbled

  • Salsa

  • 3/4 c sliced black olives

  • Optional:
  • Avocado slices

Directions

  • Thin out the sour cream with the water and mix until completely smooth. Then simply assemble the haystacks in whichever order you’d like!
