One of my fave topping combos on pizza is definitely shaved brussel sprouts with caramelized onions and balsamic glaze. Many times I’ll stock the freezer with frozen cheese pizzas, not because cheese za is my fave (although every now and then a simple cheese pizza slapssss and it’s just what you need) but I also like using cheese pizzas as a blank canvas for whatever creation I’m feeling that day. And that creation is many times sautéed brussels with caramelized onions and balsamic glaze! That flavor combo is just soooooo good!

And with that in mind, I knew that I had to make a pizza bite/toast version of it. I decided to pair this topping combo with creamy goat cheese, because that just sounds heavenly—doesn’t it? These pizza bites hit so many delicious notes and they’re literally perfection.

Make these for a fun movie night, or when you’re having guests over, or even just as a snack whenever you’re in the mood for something that is simple to make.

How to Make These Brussel Sprout Pizza Bites with Caramelized Onions and Goat Cheese:

  1. Preheat your oven to 400 degrees.
  2. Warm through the evoo in a pan over medium heat and sauté the onions for about 12-15 minutes, stirring every other minute or so. Remove the onion from the pan and set them aside. 
  3. Add the brussel sprouts and sauté for about 2-3 minutes, then add the onions back to the pan and sauté for another 2 minutes together. Season with salt and remove from heat.
  4. Line a large baking sheet with parchment paper and lay the quartered bread slices on the sheet. 
  5. Pop the baking sheet into the oven and toast for 5 minutes.
  6. Pull the sheet out of the oven and spread the room temp goat cheese over each slice using a butter knife. 
  7. Layer on the brussel sprout/onion mixture over each toast, then bake for an additional 4 minutes.
  8. Pull the sheet from the oven, crack fresh black pepper over each pizza bite, plate and drizzle over the balsamic glaze.
  9. Enjoy!

Brussel Sprout Pizza Bites with Caramelized Onions and Goat Cheese – Tips & Tricks

  • If you don’t have goat cheese, you can also melt slices of low-moisture mozzarella on each toast before you pop them back into the oven for the final 4 minutes of baking.
  • You can use store-bought balsamic glaze for this recipe, but I also have a super easy 2-ingredient Homemade Balsamic Glaze recipe for you here (you can find the recipe in the recipe card near the bottom of this blog post).
  • These bites are best enjoyed immediately but if you think you’ll have leftovers, I’d recommend only drizzling the balsamic glaze over the bites you’ll be eating. Then store the remaining bites in an airtight container in the fridge for up to 2-3 days.
  • When ready to eat, re-heat them for 4-5 minutes on a parchment lined baking sheet in a 400 degree preheated oven. Then drizzle the balsamic glaze as you eat!
  • Re-heating the pizza bites in the oven with the balsamic glaze may cause the glaze to burn, so just wanted to give that tip as a heads up!

Ingredients

  • 1 tbsp evoo

  • 1 c sliced yellow onion, about 1 small-medium sized onion

  • 2 c shredded Brussel sprouts, about 4-6 brussel sprouts (depending on size)

  • 4 slices of your bread of choice cut into quarters – the sturdier the bread the better (my favorite is Ezekiel bread)

  • 1/3 c goat cheese, room temperature

  • 2 tbsp balsamic glaze (my homemade recipe linked here)

  • ¼ tsp salt

  • Pinch of pepper
