Vegetarian Haystacks

This Vegetarian Haystack recipe is the perfect Meatless Monday recipe, plus they’re so fun to assemble and eat!  u003cbru003eIf you’ve never heard of Haystacks, they’re essentially a cross between a taco salad and nachos. They’re the easiest and quickest meals to get on the table, especially for large crowds!

Ingredients

  • 20 oz Tortilla chips
  • 4 c shredded Romaine lettuce
  • 3 tomatoes, chopped
  • 2 c black (or pinto) beans
  • ½ c sour cream
  • 2 tbsp cold water
  • 5 oz queso fresco, crumbled
  • Salsa
  • 3/4 c sliced black olives

Optional:

  • Avocado slices

Instructions

  • Thin out the sour cream with the water and mix until completely smooth. Then simply assemble the haystacks in whichever order you’d like!

  • Chips
  • Lettuce
  • Beans
  • Tomatoes
  • Sour cream
  • Olives
  • Cheese
  • Salsa
