These crispy baked wings get tossed in a sticky, sweet-and-spicy mango habanero glaze made from charred habaneros, mango nectar, honey, and butter that clings to every single wing and caramelizes into a glossy finish. Pat the wings completely dry with paper towels, this is the most important step for crispy skin.
In a large bowl combine the baking powder, salt, garlic powder, onion powder, smoked paprika, Knorr Premium Roasted Chicken Base, and black pepper. Add the dry wings and toss until every wing is completely and evenly coated.
Place in a single layer on a wire rack set over a parchment-lined sheet pan. Refrigerate uncovered for at least 1 hour or overnight.
Add the mango nectar, charred habaneros, garlic, honey, soy sauce, orange juice, and apple cider vinegar to a blender and blend on high until completely smooth.
Strain through a fine mesh sieve into a small saucepan pressing firmly to remove any remaining solids.
Bring the glaze to a simmer over medium heat and cook uncovered for 12–16 minutes, stirring frequently, until it reduces by about half and becomes glossy, thickened, and coats the back of a spoon.
Remove from heat and stir in the butter until fully melted and incorporated. The glaze will continue to thicken slightly as it cools so pull it just before you think it is ready.
Preheat the oven to 425°F. Bake the wings for 25 minutes then flip every wing and rotate the pan. Bake for another 20–25 minutes until deeply golden and crispy all over.
Remove the wings from the oven and immediately transfer to a large bowl. Pour the warm glaze generously over all the wings and toss until every wing is completely coated.
Transfer to a platter and finish with chopped fresh cilantro. Serve immediately.
Notes
Patting the wings bone dry is non-negotiable. Any moisture left on the skin will steam in the oven instead of crisping, and no amount of baking powder will fix that.
The overnight uncovered fridge rest draws even more moisture out of the skin and is the difference between crispy wings and good wings.
Pull the glaze off the heat just before it looks fully reduced. It thickens as it cools, and an over-reduced glaze turns into sticky candy instead of a pourable sauce.
Toss the wings in the glaze while they're still screaming hot straight from the oven, the heat helps the glaze melt and cling to every surface evenly.
