How to Make Fennel and Apple Salad with Goat Cheese

Perfect as a side dish or a full entree, this Fennel and Apple Salad with Goat Cheese is a little sweet, a little tart and so refreshing!

Ingredients

  • 6 c spring mix, lightly chopped for bite size pieces
  • 1 fennel bulb, trimmed and thinly sliced
  • 1 tbsp chopped fennel fronds
  • 2 celery ribs (depending on size), sliced diagonally 1/4-inch thick
  • 2 honeycrisp or granny smith apples (depending on size), cored and thinly sliced
  • ¼ c dried cranberries
  • ½ c sliced almonds
  • ¼ c goat cheese
  • Honey Lemon Vinaigrette: 2 tsps honey 2 tbsps evoo ½ c fresh lemon juice 1 tsp lemon zest (about the zest of 1 lemon) 1 tsp salt 1/2 tsp pepper

Instructions

  • Prepare the dressing by adding all the ingredients to a blender and blending on high until completely smooth. Pour the dressing into a serving bowl and set aside.
  • Arrange all the salad ingredients on a large serving platter in the order they are listed, making sure to break up the goat cheese into very little chunks.
  • Once they’re all on the platter, give the salad a very gentle toss. 
  • Then serve alongside the dressing.
