How to Make Fennel and Apple Salad with Goat Cheese

Ingredients
6 c spring mix, lightly chopped for bite size pieces
1 fennel bulb, trimmed and thinly sliced
1 tbsp chopped fennel fronds
2 celery ribs (depending on size), sliced diagonally 1/4-inch thick
2 honeycrisp or granny smith apples (depending on size), cored and thinly sliced
¼ c dried cranberries
½ c sliced almonds
¼ c goat cheese
Honey Lemon Vinaigrette: 2 tsps honey 2 tbsps evoo ½ c fresh lemon juice 1 tsp lemon zest (about the zest of 1 lemon) 1 tsp salt 1/2 tsp pepper
Instructions
Prepare the dressing by adding all the ingredients to a blender and blending on high until completely smooth. Pour the dressing into a serving bowl and set aside.
Arrange all the salad ingredients on a large serving platter in the order they are listed, making sure to break up the goat cheese into very little chunks.
Once they’re all on the platter, give the salad a very gentle toss.
Then serve alongside the dressing.
