How to make Beer-Marinated Carne Asada

Beer-Marinated Carne Asada

Beer-Marinated Carne Asada is bold, juicy, and infused with layers of flavor from a zesty blend of spices, fresh citrus, and a full-bodied Mexican beer. The skirt or flank steak is marinated until tender, then grilled or pan-seared until smoky and caramelized on the outside.
This recipe is perfect for tacos, burritos, or served with grilled veggies and rice. The beer adds depth and tenderness, while orange juice and herbs brighten every bite. It’s a must-make for weekend cookouts or a casual weeknight fiesta.

Ingredients

  • 2 lbs skirt steak or flank steak
  • 1 can of Mexican beer
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tbsp paprika
  • 1 tbsp black pepper
  • 1 tsp oregano
  • 2 tsp salt
  • Juice of 1 orange
  • 2 tbsp olive oil
  • 1/4 onion sliced
  • 1/4 bunch cilantro

Instructions

  • In a large bowl, combine the steak with beer, garlic powder, onion powder, paprika, black pepper, oregano, salt, orange juice, olive oil, sliced onion, and cilantro.
  • Mix well so the meat is evenly coated.
  • Marinate in the fridge for at least 1 hour or overnight for best flavor.
  • Preheat a grill or skillet over medium-high heat.
  • Grill or pan-sear the steak to your desired doneness, flipping once during cooking.
  • Let the cooked steak rest for a few minutes before slicing against the grain.
  • Serve with tortillas, grilled jalapeños, queso fresco, salsa, and a squeeze of lime.
  • Enjoy!

Notes

  • Overnight marinating will yield the most flavorful and tender results
  • Use skirt steak for a beefier flavor or flank steak for a leaner bite
  • Reserve some marinade (before adding the raw meat) for brushing on the meat during grilling for extra flavor
  • This carne asada is also great chopped up in burritos, over nachos, or served with rice and beans
